]]> According to the National Gardening Association, Shiitake Mushrooms have thick, meaty-texture and are considered the “king of mushrooms.” These three- to four-inch-diameter brown mushrooms with white flecks are highly esteemed both fresh and dried for cooking and for their medicinal properties. Researchers have found that they reduce blood pressure, lower cholesterol levels, stimulate the immune system, and have anti-tumor properties; they are also being used in AIDS research.

Kits fruit easily indoors over a wide temperature range (55ºF to 75ºF), producing two to three pounds of fruits total over two to three months at two-week intervals. They store for up to 14 days. If you really get into shiitake mushrooms you can inoculate logs and grow them in a basement. Although more involved, this method offers a more continuous supply of these tasty treats.

]]> I’ve purchased a similar mushroom log in the past. This one is much larger, producing a bounty of mushrooms very quickly. One recommendation: After the first step of submerging the log in water for about 10 hours, you may want to put it in the basement for a few days. There is a ripe, musty odor in the first few days. The mushrooms grew much faster than the instructions predicted. No odors after the first few days. For me, it was a good way to “garden” during a cold New England winter.
